Steak with Roasted Potatoes and Arugula

Ingredients

  • 1 1/2 pounds red potatoes, cut into wedges
  • 2 tablespoons olive oil
  • 4 cloves garlic, smashed
  • 1 bunch arugula (about 4 cups)
  • 1 flank steak (about 1 1/2 pounds)
  • Salt and pepper to taste

Steps

    Preheat oven to 425° F. Toss potatoes, olive oil, garlic with salt and pepper. Place on baking sheet and roast until golden brown and tender, 35-40 minutes. Toss with arugula.

    15 minutes before potatoes are done, heat large skillet over medium-high heat. Season steak with salt and pepper. Brown on both sides for 3 minutes.

    Transfer skillet to oven (place on rack above potatoes). Cook 8-10 minutes or until steak is at desired doneness.

    Let steak rest for 5 minutes before slicing into thin strips across the grain. Serve wtih potatoes and arugula.
