Ingredients

  • 1 roll (16.5 oz) refrigerated Pillsbury™ Sugar Cookie Dough
  • 1 cup sugar
  • 1/4 cup lemon juice
  • 1/4 cup water
  • 3 tablespoons cornstarch
  • 1 1/2 cups fresh raspberries
  • 1 1/2 cup fresh blueberries
  • 1 1/2 cup fresh blackberries
  • 1 cup whipped cream (optional)
  • 8 sprigs fresh mint leaves for garnish (optional)

    Preheat oven to 375°F. Spray a standard-sized muffin tin with nonstick baking spray.

    Cut the sugar cookie dough into 8 even pieces. Press each piece into the prepared muffin tin, creating a bowl shape in each muffin cup.

    Bake sugar cookie cups in preheated oven for 12-15 minutes, or until the center of each cookie has set and the edges are golden brown. Remove from the oven and tap against the counter a few times to encourage the center of each cup to settle down, creating a space for the berries in the center of each cup.

    In a small pot, combine the sugar, lemon juice, water, and cornstarch. Heat until the mixture is thickened, then allow to cool slighty. Spoon over berries, tossing them gently to coat with the cornstarch and sugar mixture.

    Spoon berries into each sugar cookie cup. Garnish with whipped cream and mint springs, if desired.
