Super Soft Ginger Cookies

Nice big, soft ginger cookies. A great recipe when you are craving cookies but looking for something a bit different that plain old chocolate chip or sugar cookies.

Ingredients

  • 2 1/4 cups all-purpose flour
  • 2 teaspoons ground ginger
  • 1 teaspoon baking soda
  • 3/4 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/4 teaspoon salt
  • 3/4 cups margarine, softened
  • 1 cup sugar
  • 1 large egg
  • 1 tablespoon water
  • 1/4 cup molasses
  • 2 tablespoons sugar

Steps

    Preheat oven to 350° F. Sift together the flour, ginger, baking soda, cinnamon, cloves, and salt. Set aside.

    In large bowl, cream together margarine and 1 cup sugar until fluffy. Beat in egg, then stir in the water and molasses. Slowly add sifted ingredients into the molasses mixture. Shape dough into balls (about the size of a golf ball) and roll in remaining 2 tablespoons of sugar.

    Bake 8 to 10 minutes. Cool on baking sheet for 5 minutes before removing to a wire rack to cool completely. Store in airtight container.
