  • First of all, I absolutely adore any and all things mac and cheese. Second of all, I absolutely cherish any and all things curry. Third of all, I absolutely treasure any and all things sweatpants, but I probably shouldn't have brought that up. Lastly, this ain't my recipe. But I about DAHED when I saw it on the Food Network dot com. I seriously didn't change much at all, except I went with all milk, instead of milk and cream. But I'm a moron. Go with cream. And all the people said A the Mac and Cheese MEN. Broil it with some panko and butter on top for extra gorgeousness in your life. I almost can't even look at it. Wait, yes I can.

Thai Red Curry Mac and Cheese

Ingredients

  • 1 block (8 oz) monterey jack cheese, grated
  • 5 tablespoon butter
  • 3/4 cup panko breadcrumbs
  • 1 pinch coarse salt and freshly ground pepper
  • 2 tablespoons butter, melted
  • 5 tablespoons all-purpose flour
  • 1 pound elbow macaroni
  • 1 block (8 oz) cheddar cheese, grated
  • 5 cups milk
  • 1 jar (4 oz) red Thai curry paste

Instructions

    Bring a large pot of salted water to a boil. Cook the pasta until it is al dente, about 6 minutes. Drain.

    In another large pot, melt the butter over medium-high heat. Add the flour and whisk for about a minute, until it is darker in color and fragrant.

    Add the curry paste and whisk to combine.

    Add the milk, bring to a boil, then reduce the heat and continue to whisk until it is thick and creamy, about 5 minutes.

    Off the heat add the cheese and stir to combine.

    Add the cooked pasta and stir to combine. Transfer to a baking dish.

    In a small bowl, combine the remaining melted butter, panko, and the salt and pepper. Sprinkle the mix over the pasta and broil for a few seconds until golden brown on top. Garnish with fresh cilantro and serve immediately!
