Ingredients

  • 1/2 cup coconut oil, softened
  • 1/2 cup coconut sugar
  • 1 tablespoon vanilla
  • 1 egg
  • 1 3/4 cups Bisquick Heart Smart™ mix
  • 1 cup cooked quinoa
  • 1/4 cup shredded coconut
  • 1/4 cup chopped pecans, walnuts or sunflower seeds
  • 1/4 cup dried cranberries
  • 1/4 cup M&M’s™ dark chocolate candies

Instructions

  • Step

    Heat oven to 350°F. In a stand mixer, beat together coconut oil, sugar, vanilla and egg. Add Bisquick™ and mix until combined.

    Stir in quinoa, coconut, nuts, cranberries and M&M’s™.

    Scoop onto a parchment-lined baking sheet.

    Bake 8 to 10 minutes, or until cookies set.
