    Ingredients

    • 1 medium rotisserie chicken, shredded
    • 1 (4.5 oz) can Old El Paso chopped green chiles
    • 1/2 (1 oz) packet Old El Paso taco seasoning (or as much as you want!)
    • 8 large spinach tortillas
    • 1 (8 oz) block Monterey Jack cheese, shredded
    • 1/2 cup roughly chopped cilantro

    Directions

    1. 1In a large bowl, combine the chicken, chiles and taco seasoning. Stir well to get everything coated.
    2. 2Spoon a little of the chicken filling close to edge of each tortilla, leaving about an inch at one side. Top the filling with shredded cheese and cilantro. Gently roll up each tortilla and place them on a baking sheet seam side down.
    3. 3Continue with the remaining 7 tortillas. Slide baking sheet into a 350 degree oven and bake 15 minutes, or until the cheese is melted and everything is heated through.
    4. 4Slice tortillas into 1-inch (or bigger) pinwheels and serve immediately!

    These were really good! I ended up adding fajita mix to the chicken since I didn't have any taco mix on hand and the wraps tasted similar to Taco Bell's chicken; my husband was thrilled! I made some sriracha spiced mayo to go along with these as well as some black bean salad and it was a perfect week night meal. I will definitely be making these again!
