Banana-Trail Mix Quick Bread

A fun twist on a typical banana quick bread. The trail mix adds some great flavor and texture.

Ingredients

  • 2 eggs
  • 1 1/2 cups trail mix, preferably with chocolate chips
  • 1 3/4 cups flour
  • 2/3 cup sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking soda
  • 1 cup mashed bananas
  • 1/3 cup butter, melted

    Preheat oven to 350° F. Grease 9 x 5 inch loaf pan.

    In large mixing bowl, combine flour, sugar, baking powder, salt and baking soda.

    In medium bowl, combine bananas, butter and eggs. Add mixture to dry ingredients and beat with mixer on medium speed until combined.

    Stir in trail mix until well-blended. Spoon into loaf pan.

    Bake 50 minutes or until toothpick inserted in center comes out clean. Cool in pan 10 minutes. Remove from pan and cool complete on wire rack.
