Bananas Foster Dutch Baby Pancake

This dramatic dish is just as comfortable on the breakfast table as it is ready for dessert. Watch this baby (pancake) come alive in your oven, then fill it with rich bananas foster flavor. The buttery banana-caramel topping is tinted with rum—because a little booze is one of the better ways to start (or end) the day.

Ingredients

Pancake

  • 2 tablespoons butter
  • 2 eggs
  • 1/2 cup Gold Medal™ all-purpose flour
  • 1/2 cup milk
  • 1/4 teaspoon salt

Filling

  • 1/3 cup caramel sauce
  • 2 teaspoons dark rum
  • 2 tablespoons butter
  • 2 medium bananas, cut on the bias into 1/2-inch slices
  • 1 cup whipped cream

    Heat oven to 400°F.
  • 2
    For pancake, add 2 tablespoons butter to 9-inch glass pie plate; place in oven about 1 minute or until butter is melted. Carefully remove pie plate to heatproof surface; brush butter over bottom and side of pie plate.

    Meanwhile, in medium bowl, beat eggs slightly with whisk. Beat in flour, milk and salt just until mixed (do not overbeat). Pour into pie plate.

    Bake 25 to 30 minutes or until puffy and deep golden brown.

    For filling, mix caramel sauce and rum in small bowl until blended.

    In 10-inch nonstick skillet, melt 2 tablespoons butter over medium-high heat. Add banana slices. Cook 1 to 2 minutes while gently stirring, until bananas just start to soften; remove from heat. Add rum caramel mixture; stir to coat.

    Spoon banana mixture into pancake; top with whipped cream.

    To make 1 cup whipped cream, start with a generous 1/2 cup of very cold heavy whipping cream. It can be lightly sweetened with 1 tablespoon of powdered sugar as desired. Whip in a chilled metal bowl until stiff peaks form.
