Berry Pear Bacon Crunch Bars

Berries. Pears. A graham cracker crust. A crunchy topping with Total™ cereal and bacon. These bars are delicious -- and totally crave worthy.

Ingredients

  • 6 whole graham crackers
  • 1 tbsp cold unsalted butter, cut into pieces

Filling

  • 1 1/2 cups mixed frozen berries
  • 1 ripe pear, diced
  • 1 tbsp granulated sugar
  • 1 tbsp all-purpose flour

Topping

  • 1/2 cup Total™ cereal, crushed
  • 2 slices bacon, cooked and crumbled
  • 1 tbsp maple syrup

Steps

    Preheat oven to 375°F.
  • 2
    In the bowl of a food processor, combine the graham crackers and butter. Pulse until finely ground. Pour into an 8x8 oven-safe dish and pat down gently to form an even crust layer.

    In a medium-size mixing bowl, stir together the berries, pear, sugar and flour. Continue until it's well combined. Pour into the baking dish and gently spread out so it forms one even layer.

    Sprinkle the crushed Total™ cereal on top of the berries, followed by the crumbled bacon. Then, drizzle with the maple syrup.

    Bake for 25-30 minutes, until golden brown and the berries are soft to the touch. Allow to cool for 10 minutes before serving with forks.

    Cover and store leftovers in the refrigerator. This can also be served cold.

    I love desserts that incorporate fruit. It makes me feel like they have some, albeit a little, nutritional value. Besides, I just generally love all things fruit.

    As a result, many of the desserts that I make for my family involve fruit – apples, berries, bananas, you name it. But this is the first time I’ve used pears.

    Oh, how I love pears. I don’t eat them nearly enough, but they do rank very high on my favorite fruits list (right up there with all berries). So, when I was developing this recipe and ran short on berries, I figured why not toss a pear in? And it worked out awesome.

    These bars have it all: that tender graham cracker crust that makes everything amazing. That layer of sweet and tart fruit that makes your tongue curl and crave more all at once. That sprinkling of sweet-salty crunch on top. They are simply amazing.

    The idea for Berry Pear Bacon Crunch Barswas born over the interweb when Erin and I were talking potential recipes for this month. I said something about a berry crumble and she asked if I could get a little bacon in that? Um. Yes!

    A drizzle of maple syrup finishes this off, giving it a lovely richness, and candying some of that bacon. Heavenly.
