Cheesy Bacon-Corn Casserole

A yummy twist on the classic creamed corn casserole side dish.

Ingredients

  • 4 slices bacon, chopped
  • 6 tablespoons unsalted butter, cubed
  • 4 cloves minced garlic
  • 1/2 cup Gold Medal™ unbleached all-purpose flour
  • 3 cups whole milk
  • 4 ounces cream cheese
  • 1/4 cup grated or cubed soft cheese (mozzarella, Brie, etc.)
  • 2 cups grated sharp cheddar cheese
  • 1 teaspoon paprika
  • 3 (15-oz) cans frozen whole kernel sweet corn
  • Salt and pepper, to taste

    Preheat oven to 375°F.
  • 2
    In a large saucepan over medium heat, cook bacon until brown and very slightly crispy, about 8-10 minutes. Add butter and garlic and cook until fragrant, about 1 minute.

    Add flour and cook, stirring constantly, for 1 minute, then whisk in milk and bring to a boil. Cook, stirring constantly, until thickened, about 2 minutes.

    Add cream cheese, soft and cheddar cheeses, and paprika and cook until smooth and thick. Remove from heat and stir in corn. Season with salt and pepper.

    Pour mixture into a 13-by-9-inch glass baking dish and bake until top is a golden brown and bubbling, about 35 to 40 minutes. (After baking, you might want to skim off any excess oil that is resting on the top with a spoon, if desired). Cool slightly before serving.

    With hosting Thanksgiving dinner again this year, I’m starting to feel like I’m on a countdown to liftoff when it comes to planning the menu. If things aren’t perfectly organized and thought through way ahead of time, I go bonkers. In just less than an hour – and with only 15 minutes of active prep time – you can have this yummy, indulgent twist on classic creamed corn casserole on your Thanksgiving table without even breaking a sweat.

    Just pop it in the oven, get your table set and your other menu items prepared, and by the time you come back, you’ll have a piping-hot, ooey-gooey, ultra-cheesy side dish with which to celebrate all your hard work.

    Bonus: There’s bacon in it. Enough said.

    So if you’re finding yourself in that all-too-familiar stage of frazzledness in the critical days before Thanksgiving, add this casserole to your menu to save yourself some time and worries.
