Ingredients

  • 4 cups cooked turkey (or chicken)
  • 1 2/3 cup grated Parmesan cheese
  • 2 cups milk
  • 3 cups chicken broth
  • 1/2 cup flour
  • 1 teaspoon minced garlic
  • 1/2 cup diced celery
  • 1/2 cup diced white onion
  • 1/2 cup salted butter
  • 1 (16 ounce) package uncooked spaghetti

Steps

    Preheat oven to 350°F. Spray a 9X13 baking dish with cooking spray.

    Bring a large pot of lightly salted water to a boil. Add spaghetti, and cook for 8 to 10 minutes or until al dente. Drain.

    While pasta is cooking melt butter in a medium saucepan over medium heat. Add onion, celery, and garlic, and sautee for a minute.

    Stir in flour. Mix in chicken broth and milk. Cook and stir until the mixture comes to a boil. Stir in about 1 1/3 cups Parmesan cheese, and remove from heat.

    Mix chicken broth mixture and turkey with spaghetti and pour into the baking dish. Top with remaining cheese. Bake 35-40 minutes in the preheated oven, until surface is lightly browned.

    Last year my kids refused to eat Thanksgiving dinner because they were having too much fun playing with our friends that we were hosting. I slaved all day just to have them throw a full-on temper tantrum and request chocolate chips as their meal. Since we had company over, I weighed my odds and decided that a pleasant conversation with the adults outweighed winning the battle of my kids eating their food. I wanted to enjoy at least some of the fruits of my labor!

    I succumbed and let them eat a plate full of chocolate chips for dinner. Mother of the year over here, people. You win some, you lose some. I made sure to take a picture to document the chaotic moment and save it for blackmail when the kids are older. When I made this Creamy Turkey Tetrazzini a couple days later, they gobbled it up without complaint.
