Ingredients

lb cooked shrimp, finely chopped

cup celery, chopped
1/2
cup mayonnaise

tablespoons red onion, chopped

tablespoon fresh lemon juice
Salt and pepper, to taste

endive leaves (3 heads)
Fresh chopped cilantro, to taste, to garnish

    In a bowl, combine all ingredients except endive leaves.

    To serve, add 1 tablespoon of the shrimp salad to each endive leaf, top with chopped cilantro.

  • This salad can also be made with tuna or crabmeat.

  • Endives are a white leafy vegetable that you can eat raw or cooked. I prefer it raw in a salad.
