Ingredients

3 small avocados, very ripe
1/2 small shallot, finely diced
2 tablespoons roasted red peppers OR sundried tomatoes, finely diced
1/4 cup fresh basil, finely chopped
2 tablespoons kalamata olives, finely chopped
1 lemon, squeezed (reserve juice; remainder can be discarded)
Salt to taste
1 bag Food Should Taste Good™ olive tortilla chips

In a medium bowl, use a fork to smash the avocado until chunky.

Mix in the shallot, roasted red peppers or sundried tomatoes, basil, olives, and lemon juice. Salt to taste.
