Grilled Turkey Sausage and Peppers

Ingredients

  • 1 large green bell pepper
  • 1 small vidalia onion
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • 1 lb sweet Italian turkey sausage
  • Marinara sauce
  • Shredded mozzarella cheese
  • 6 Hoagie or Club rolls

    Seed the pepper and then cut into strips. Peel the onion, cut in half and then cut into strips. Arrange the vegetables on a large piece of aluminum foil. Drizzle with olive oil and sprinkle with salt and pepper. Fold the sides of the foil up, rolling them together to form a sealed packet.

    Turn on the grill and set to its medium setting. Place the packet on the grill (no preheating required). Cook for 10 minutes.

    While the packet is cooking, cut the sausages length-wise into half, leaving the halves connected.

    Flip the packet and add the sausage to the grill. Cook for another 7-10 minutes, flipping the sausage once, until cooked through. If desired, grill the buns briefly to brown.

    Remove the food from the grill and prepare the sandwiches. Place one sausage on each roll. Top with the grilled onions and peppers (careful opening the foil packet -- it will be hot!). Then spoon a little marinara sauce over. Finish with a sprinkle of mozzarella cheese. Serve.

  • June totally snuck up on me this year, bringing with it the warm weather I have been impatiently waiting for and leaving us just days from the end of school. Geesh. Where did the time go? Now that we’re headed for the lazier days of summer, we’re getting hot and heavy with our grill. I am a total grill addict -- especially a foil-packets-of-vegetables-on-the-grill addict. Foil packets are a great way to make a side dish (or another component of a dish) without having to heat up the kitchen. So, you can probably guess this, but I cook in foil packets pretty often in the summertime. One thing I have been trying to do over the past few years is to take meals typically cooked in the oven and adapt them for the grill. That means that dishes (like sausage and peppers!) that always seem like more of a winter dish can get a summer makeover. For these Grilled Turkey Sausage and Peppers sandwiches, I cook green bell peppers with Vidalia onions in a foil packet. They get soft and (the onions, at least) sweet, but still retain a little of that crispness. It’s a great mix of textures and flavors when you layer the spiced sweet Italian turkey sausage with the peppers and onions, marinara and mozzarella cheese on a toasted bun. Delish.
