Place hash browns in baking dish; spoon sausage mixture on top. Top with tomatoes and 1 1/2 cups of the Cheddar cheese. Carefully pour eggs over assembled casserole. Top with remaining 1/2 cup cheese. Cover and refrigerate at least 3 hours but no longer than 12 hours.

Heat oven to 350°F. Uncover; bake 45 to 50 minutes or until top is lightly browned, center is set and knife inserted in center comes out clean. Let stand 5 minutes. Top with green onions.

Expert Tips

  • O’Brien style frozen hash brown potatoes can be used instead of plain diced potatoes.
  • Want more spice? Use pepper Jack cheese and beat 1 teaspoon of hot sauce in with eggs.
