Ingredients

  • 1 tablespoon vegetable or canola oil
  • 1 cup chopped onions
  • 3/4 cup chopped yellow or red bell pepper (1 medium)
  • 1 can (4 oz) Old El Paso™ Chopped Green Chiles
  • 1 packet (.85 oz) Old El Paso™ Chicken Taco Seasoning Mix
  • 2 packages (7 oz each) fully cooked frozen chicken breakfast sausage links, thawed and chopped
  • 3 cups frozen diced hash brown potatoes
  • 1 can (14.5 oz) Muir Glen™ organic fire roasted diced tomatoes, drained
  • 2 cups shredded Cheddar cheese (8 oz)
  • 12 large eggs, beaten
  • 2 green onions, sliced

Steps

    Spray 13x9-inch (3-quart) glass baking dish with cooking spray.

    In 12-inch skillet, heat oil over medium heat. Add onions and bell pepper; cook to 6 minutes, stirring occasionally, until vegetables just start to soften. Remove from heat. Stir in green chiles, taco seasoning mix and sausage until well combined.

    Place hash browns in baking dish; spoon sausage mixture on top. Top with tomatoes and 1 1/2 cups of the Cheddar cheese. Carefully pour eggs over assembled casserole. Top with remaining 1/2 cup cheese. Cover and refrigerate at least 3 hours but no longer than 12 hours.

    Heat oven to 350°F. Uncover; bake 45 to 50 minutes or until top is lightly browned, center is set and knife inserted in center comes out clean. Let stand 5 minutes. Top with green onions.
