Heat oven to 350°F. In 9-inch square pan, melt butter in oven. Sprinkle brown sugar evenly over melted butter. Arrange pineapple slices over brown sugar. Place cherry in center of each pineapple slice.
  • 2
In medium bowl, beat remaining ingredients with electric mixer on low speed 30 seconds, scraping bowl constantly. Beat on high speed 3 minutes, scraping bowl occasionally. Pour batter over pineapple and cherries.
  • 3
Bake 50 to 55 minutes or until toothpick inserted in center comes out clean. Immediately place heatproof serving plate upside down over pan; turn plate and pan over. Leave pan over cake a few minutes so brown sugar mixture can drizzle over cake; remove pan. Serve warm. Store cake loosely covered.

More About This Recipe
  • We’re firm believers that a good cake never goes out of style — and that’s why it’s no surprise that Betty’s classic Pineapple Upside-Down Cake recipe is still going strong after decades of popularity. Learn to bake this cake and you’ll make it for years to come, too! Buttery cake gets baked on top of a layer of pineapple slices and cherries in a brown sugar-butter mixture, and when it gets flipped over after baking (it’s easier than you think!), the sweet syrup infuses the cake with extra flavor. We love this cake so much that we’ve concocted a whole roster of pineapple upside-down cake recipes so you can make it for all occasions — even when you need to make something on the quick!
