Stacked Caprese Salad with Balsamic Vinegar

Ingredients

medium to large tomato
1/4
cup fresh basil leaves

ounces fresh mozzarella cheese

teaspoons balsamic vinegar

tablespoon olive oil
salt and pepper, to taste

    Slice the tomato in approximately 1/4 inch thick slices. Do the same for the mozzarella.

    Alternate layers between the tomatoes, mozzarella, and basil. First, a tomato slice, then mozzarella slice, then a couple leaves of basil; beginning and ending with tomatoes.

    Drizzle with olive oil and balsamic vinegar. Season to taste with salt and pepper, if desired.

  • Tomatoes, basil and fresh mozzarella are my favorite summertime combination. I love to make a simple stacked caprese salad with slices of tomatoes and mozzarella, layered with fresh basil and drizzled with balsamic vinegar and olive oil. Just thinking about it makes me hungry. Often I am not that hungry come dinner time. The scorching heat gets to me and makes me feel slow and tired and not much in the mood for a big dinner. Tomatoes, mozzarella, and basil often fit the meal for a great evening snack. This recipe for Stacked Caprese Salad with Balsamic Vinegar is so versatile. Enjoy it just as is for a wonderful side salad, chop the tomatoes and mozzarella and toss with pasta for a light meal, or use grape tomatoes and small balls of mozzarella and thread them on skewers for a summer party appetizer. No matter how you choose to serve it, the ingredients are basically the same. It's the perfect way to take advantage of summer garden or farmer's market tomatoes.
