More About This Recipe
  • Celebrate Cinco de Mayo with these easy-to-assemble cookies that are also adorable!

This is nacho average Cinco de Mayo dessert.

I happen to love Oreos™ of any kind, but the golden ones are especially delish. AND they make adorable taco cookies.

I decided to kick up the cuteness a notch and make them extra festive for a fiesta.

So I came up with Taco Gato cookies (or Taco Cat cookies)! Hey, I’m kinda proud I remembered the Spanish word for cat because my high school Spanish class was a loooooong time ago. But now that I think about it, maybe it should be Tacos el Gato or something like that. Like I said, Spanish class was about a bazillion years ago (and I probably didn’t get the best grade).

Gather up some Golden Oreos™, Fruit Roll-Ups™, frosting, sprinkles and butterscotch chips and let’s get this fiesta started!

Cut off about 1/3 of the Oreo™ and stick on 2 butterscotch chips for the ears using the frosting as the “glue”.

With the edible marker, make some dots in the middle of the white confetti sprinkles for the eyes, and color one completely in black for the nose.

Cut up some green and red Fruit Roll-Ups™ into small strips for the lettuce and tomato. If you want, you can tint some shredded coconut orange for cheese. (I don’t really like coconut so I left it out.)

Frost the cut portion of the cookie and arrange your Fruit Roll-Ups™ slices on top.

Attach the eyes and nose sprinkles to the front of the cookie.

And draw in the whiskers and mouth.

Now you have cookies so cute that everyone will taco-bout them!
