White Chocolate Macadamia Nut Bars

Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 2/3 cup sweetened condensed milk
  • 1 cup white chocolate chips
  • 3/4 cup whole macadamia nuts, measured then coarsely chopped
  • 1 cup sweetened coconut

Steps

    Preheat oven to 350°F. Line an 8x8 baking dish with foil and spray with cooking spray.

    In a small bowl combine melted butter with graham cracker crumbs and mix well.

    Press firmly into the bottom of the pan.

    Pour sweetened condensed milk over graham cracker crust.

    Combine white chocolate chips, macadamia nuts, and sweetened coconut in a bowl. Pour mixture onto the sweetened condensed milk and press down slightly.

    Bake for 20-25 minutes or until coconut is toasted. Cool on a wire rack.

    After bars have cooled, pull bars out of pan using foil and cut into 16 bars.

    *If you can't get enough chocolate, add a chocolate drizzle to these bars for an extra sweet touch. Melt 1/4 cup semi-sweet chocolate chips with 1 teaspoon of shortening in the microwave until melted. Drizzle over cooled bars and let chocolate set up before serving.

  • Macadamia nuts have been on my mind ever since I returned from a fabulous week-long trip to Hawaii. From coconut macadamia nut pancakes to macadamia encrusted fish, Hawaiians infuse as many dishes as they can with the salty nut. And trust me…I tried as many of them as I could get my hands on! My favorite combination of all is macadamia nuts with chocolate. I even kept a package of chocolate-covered macadamia nuts in my beach bag as a reward to snack on each time I came in to rest from surfing. They were even better slightly melted! These White Chocolate Macadamia Nut Bars are a little reminder of my week in paradise. They have a graham cracker crust on the bottom and a mixture of white chocolate, macadamia nuts, and toasted coconut on top. As they were baking in the oven, the smell of toasted coconut brought me right back to the beaches of Hawaii. I brought home eight boxes of chocolate covered macadamia nuts for friends and family as souvenirs, but a couple of the boxes…ahem…disappeared mysteriously (I’ll blame it on the airline). I have a feeling these bars which have all of the flavors of Hawaii may just be the perfect solution to make up for the chocolate boxes that didn’t quite make it. Can’t get enough chocolate? If white chocolate isn’t enough for you in these bars, drizzle some melted semi-sweet chocolate chips over the top for a little added sweetness. Melt 1/4 cup semi-sweet chocolate chips with 1 teaspoon of shortening in the microwave until melted. Drizzle over cooled bars and let chocolate set up before serving.
