Chicken-Bacon Bundles

Here's a great way to use leftover cooked chicken: just bundle it up with some cheese and bacon for a quick dinner.

Ingredients

  • 2 cans (8 oz) refrigerated Pillsbury™ Original Crescent Rolls (8 Count)
  • 1 1/2 cups cubed cooked chicken or rotisserie chicken
  • 1/2 lb of bacon (about 4 slices), cooked and crumbled
  • 1 cup shredded cheddar cheese

Steps

    Preheat oven to 375°F. Unroll both cans of crescents and separate each sheet of dough into 4 rectangles. Firmly press perforations to seal. Cut each rectangle in half crosswise to make 16 pieces; press each to form 4-inch square.

    In medium bowl, combine chicken, bacon, and cheese.

    Place a scant 1/4 cup chicken mixture in the center of each square.

    Bring 4 corners of each square toward the center over the filling; twist firmly to seal. Place on ungreased cookie sheet.

    Bake at 375° degrees for 12-15 minutes or until bundles are golden brown. Serve warm and dip in ranch dressing if desired.

  • Even with four kids, work, and a busy house, I can wrap up these bundles in under 15 minutes for a quick, home-baked snack or light meal. I recently had a baby girl, and since then things in my house have been a bit chaotic to say it mildly. My New Year’s resolution was to get more organized and now with four kids, I’ve found that organization is a necessity to maintain my sanity. Part of being organized is having a meal plan so dinner actually happens before 9:00 at night. We always have dinner as a family, and I need super quick meals that don’t have much prep at all. These Chicken-Bacon Bundles literally came together in under fifteen minutes. I am not a short order cook so if my kids don’t like what I’m serving for dinner, tough luck…that’s what you’re eating. But no whining here – they loved the cheesy chicken and bacon bundles! My kids liked dipping them in ranch, but they are great all by themselves too. These are a great way to use up leftover chicken. Make them super fast by using a rotisserie chicken and precooked bacon. Now that I have my "little bundle," these Chicken-Bacon Bundles are the perfect go-to meal for a crazy day!
