Easy Cheesy Chicken-Artichoke Skillet Dip

There’s a lot to love about this dip: the bubbly, melty cheese, the combination of artichoke hearts and roasted garlic, the ring of warm French bread dippers. Not to mention it's prepped and served all in the same pan, so cleanup’s a non-issue. But why take our word for it when you could make it yourself?

Ingredients

  • 1 can (11 oz) refrigerated Pillsbury™ Original French Bread
  • 1 tablespoon butter, melted
  • 1 package (8 oz) cream cheese, softened
  • 1 1/4 cups coarsely chopped deli rotisserie chicken
  • 3/4 cup shredded mozzarella cheese (3 oz)
  • 1/3 cup shredded Parmesan cheese
  • 1/3 cup mayonnaise
  • 2 cloves garlic, chopped
  • 1 jar (6 oz) Progresso™ marinated artichoke hearts, drained and chopped
  • 1/4 cup jarred roasted red bell peppers, drained, chopped and patted dry
  • 1/2 teaspoon Italian seasoning
  • 2 green onions, sliced, white parts and green parts divided
  • 1/4 teaspoon crushed red pepper

Steps

    Heat oven to 375°F. Remove bread dough from packaging, and cut loaf into 12 equal slices.

    Brush inside of ovenproof 10-inch nonstick skillet with about a teaspoon of the melted butter. Arrange slices of bread dough around outer edge of skillet, making sure they are evenly spaced around edge of pan. Brush dough with remaining melted butter.

    In medium bowl, mix cream cheese, chicken, mozzarella, Parmesan, mayonnaise, garlic, artichokes, roasted peppers, Italian seasoning, white parts of onions and crushed red pepper.

    Spoon mixture in center of skillet, spreading it to edge of dough slices.

    Bake 25 to 27 minutes or until bread is deep golden brown and dip is heated through. Top with green parts of onions. Serve warm.

    To soften cream cheese, just microwave unwrapped cream cheese in microwavable bowl uncovered on High 10 to 15 seconds.

    This is a great recipe for leftover chicken.
