Ingredients

  • 1/4 cup (1/2 stick) unsalted butter, softened
  • 2/3 cup packed light brown sugar
  • 1/2 teaspoon vanilla extract
  • 3 tablespoons milk
  • 1/2 teaspoon salt
  • 1 cup oat flour (available at most supermarkets, or see instructions in tips section)
  • 1/2 cup chocolate chips

Steps

  • 1
In a medium-sized mixing bowl, cream together the butter and brown sugar using a hand mixer or a wooden spoon until the mixture is well blended. Add in the vanilla, milk and salt, and mix until just combined.
  • 2
Add in the oat flour and stir until just combined. Fold in the chocolate chips. Eat immediately, or chill until cold, then enjoy.

Expert Tips

  • tip 1
We swapped out traditional all-purpose wheat flour for oat flour, which is safe to eat without baking. Oat flour can be found in the gluten-free baking aisle at most major supermarkets, or you can make it easily at home.
  • tip 2
To make 1 cup of oat flour, take 1 1/3 cups of old-fashioned oats and pulse them in a high-powered blender or food processor until it resembles a fine flour.
  • tip 3
This isn’t a job for your stand mixer. Because of the small volume of dough, you’re better off using a hand mixer or a regular spoon.

More About This Recipe

  • We know this eggless cookie dough won't be seeing the inside of an oven anytime soon, and there’s no shame in that. We made this version without eggs so that it’s safe to eat “raw”—in fact, it’s not even meant to be baked. After all, the best part of making cookies is sneaking little bites of gooey dough, again and again. We’re so glad to live in a world where this is not only accepted but encouraged.
