Instant Pot™ Chicken and Chickpea Tagine

We skipped on the traditional earthenware tagine pot and opted for the Instant Pot™ instead in this easy, dinner-in-an-hour interpretation of a Moroccan classic. Save on cook time and cleanup without sacrificing any of the warm, rich and hearty flavors traditionally found in this dish.

Ingredients

  • 2 tablespoons butter
  • 1 1/4 lb boneless skinless chicken thighs, cut in 1-inch pieces
  • 1 cup chopped onions
  • 1 teaspoon salt
  • 1 can (28 oz) Muir Glen™ organic fire roasted crushed tomatoes, undrained
  • 3/4 lb sweet potato, peeled and cut into 1-inch cubes (about 2 1/2 cups)
  • 1 medium yellow or red bell pepper, cut in 3/4-inch pieces (about 1 cup)
  • 3 tablespoons harissa paste
  • 2 teaspoons ground coriander
  • 1 1/2 teaspoons ground cumin
  • 1 teaspoon ground ginger
  • 1/2 teaspoon garlic powder
  • 1 can (19 oz) Progresso™ chick peas, drained, rinsed
  • 1/4 cup coarsely chopped fresh cilantro leaves
  • 1 box (10 oz) couscous, prepared as directed on package using Progresso™ broth

    On 6-quart Instant Pot™, select SAUTE; adjust to normal. Melt butter in insert. Add chicken, onions and salt; cook 8 minutes, stirring frequently. Select CANCEL.

    Add tomatoes, sweet potato, bell pepper, harissa, coriander, cumin, ginger and garlic powder to chicken mixture in insert. Stir in chick peas well to combine. Secure lid; set pressure valve to SEALING. Select MANUAL; cook on high pressure 5 minutes. Select CANCEL. Set pressure valve to VENTING to quick-release pressure.

    Remove lid; stir in cilantro. Serve over couscous with more harissa.

    After cooking thick soups and stews, always be sure to inspect the anti-block shield and exhaust valve in the lid of the Instant Pot™ to be sure they aren’t blocked with food.

    Harissa is a Tunisian hot chili pepper paste made primarily from roasted and fresh peppers, garlic, coriander and oil. You can find it in the ethnic aisle at the grocery store.
