Firm up what you love about smoothies. Made with Key lime yogurt, apple juice and fresh spinach, these fruity gelatin bites are a blast to make, with endless possibilities.

Ingredients

  • 2 envelopes unflavored gelatin
  • 1/2 cup cold apple juice
  • 1/2 cup packed fresh baby spinach
  • 2 containers (6 oz each) Yoplait® Original 99% Fat Free Key lime pie yogurt
  • 3/4 cup apple juice, heated to boiling

    Lightly spray 9x5-inch loaf pan with cooking spray, then blot with paper towel; set aside. In large bowl, sprinkle gelatin on 1/2 cup cold apple juice to soften; let stand 1 minute.

    Meanwhile, in blender, place spinach and yogurt. Cover; blend on high speed until smooth. Add hot apple juice to gelatin mixture, and stir about 2 minutes or until gelatin is dissolved. Stir in yogurt mixture. Pour into loaf pan.

    Cover and refrigerate until firm, about 4 hours. Cut into cubes and serve, or cover and refrigerate up to 2 days before serving.

    Here’s how to make Blueberry Grape Smoothie Poppers.

    Gather the goods: Concord grape juice, fresh blueberries, vanilla yogurt and unflavored gelatin.

    In a large bowl, sprinkle gelatin on 1/2 cup cold grape juice to soften; let stand 1 minute. Add 3/4 cup hot grape juice to gelatin mixture, and stir about 2 minutes or until gelatin is dissolved. Meanwhile, blend yogurt and blueberries until smooth. Stir yogurt mixture into dissolved gelatin mixture.

    Pour into lightly greased 9x5-inch loaf pan. Cover and refrigerate until firm, about 4 hours.

    Once set, cut into cubes or use small cookie cutters to cut into fun shapes. That’s it! The smoothie poppers are ready to grab and go.
