Ingredients

box (15.25 oz) Betty Crocker™ SuperMoist™ cake mix (any chocolate flavor)
Egg(s), water and oil added to the cake mix, per package instructions
1
extra egg
1
package (8 oz) cream cheese, room temperature
3/4
cup peanut butter
1
cup powdered sugar
2
cups regular or mini semisweet chocolate chips

    Preheat oven to 350°F. Line 48 baking cups with paper cupcake wrappers, or spray with cooking spray.

    Prepare chocolate cake batter according to package instructions. Set aside.

    In a separate bowl, use an electric mixer to cream together cream cheese and peanut butter on medium speed until smooth. Add egg, and mix until blended. Reduce speed to low, and add the powdered sugar. Increase speed to medium and mix until smooth. Set aside.

    To assemble the cupcakes, place 1 level teaspoon of the chocolate batter in the bottom of each baking cup. Layer with 1 teaspoon of the peanut butter mixture. Repeat with a layer of chocolate batter, and then another layer of the peanut butter mixture. Sprinkle the top with a few chocolate chips.

    Bake for 10-12 minutes, or until a toothpick inserted in the middle of a cupcake comes out clean. Remove and let cool before serving.

  • Chocolate and peanut butter swirl together to make these mini cupcakes extra delicious! Calling all of you chocolate and peanut butter lovers! You know who you are. You are those friends of mine who, whenever they hear those two magical words together, come RUNNING. Case in point: This past weekend, I got together with a bunch of girlfriends for our monthly book club. When I placed these Mini Chocolate and Peanut Butter Cupcakes on the table, everyone politely smiled and oohed and ahhed a bit over the cute “chocolate” cupcakes. But as soon as I told them that there were two layers of peanut butter layered inside, they all immediately disappeared. Every. Last. One. I advise you to let them cool after baking, but that requires lots of patience. I may have just immediately popped one delicious bite in my mouth. SO GOOD! Enjoy!
