Beef Ramen Noodles with Sesame and Ginger

Beef up your ramen game with this sesame-studded one-pot dinner. Easy enough for weeknights but delicious enough that you’d think it’s takeout, these ain’t your college-level beef ramen noodles.

Ingredients

  • 1 tablespoon vegetable oil
  • 1 lb lean (at least 80%) ground beef
  • 1 cup thinly sliced onions
  • 1 tablespoon finely chopped peeled fresh gingerroot
  • 2 tablespoons soy sauce
  • 1 tablespoon toasted sesame oil
  • 1 tablespoon Sriracha sauce
  • 2 1/2 cups Progresso™ beef flavored broth (from 32-oz carton)
  • 3 packages (3 oz each) ramen noodles, any flavor
  • 1 package (6 oz) snow peas, thinly sliced on the bias
  • 2 tablespoons sesame seed
  • 1/4 cup chopped fresh cilantro leaves
  • Lime wedges

    In 5-quart Dutch oven, heat vegetable oil over medium-high heat. Add beef and onions; cook 7 to 9 minutes, stirring frequently, until beef is browned; drain.

    Stir in gingerroot, soy sauce, sesame oil and Sriracha sauce.

    Stir in broth; heat to simmering. Add noodles (discard flavor packets or reserve for another use) and snow peas; heat to simmering. Reduce heat to medium; cook uncovered 4 to 6 minutes longer, stirring frequently, until noodles soften and liquid is absorbed. Stir in sesame seed.

    Top with cilantro. Serve with lime wedges.

    Since you’re not using the flavor packets included with the ramen noodles, it doesn’t matter which flavor of ramen you use.

    Feel free to use other green veggies in place of the snow peas, such as sugar snap peas, kale or bok choy.

  • If ramen noodles are even slightly reminiscent of your college days when you used to scrimp and slurp your way through a bland Syrofoam cup of ramen, then first of all, you have our sympathies and second, this recipe is for you. We ditched that mysterious flavor packet (what exactly is in there, anyway?!) for savory beef broth, fresh ginger, spicy sriracha and sesame oil. While almost as frugal, to say sesame ginger beef ramen noodles are also tastier than your average ramen would be a colossal understatement.
