Baked Blueberry Oatmeal for Two

Break up with boring oatmeal. It’s time. This warm blueberry breakfast is perfect for two people—or one if you’re not into sharing and look forward to leftovers.

Ingredients

  • 1 cup old-fashioned oats
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground cinnamon
  • 1 egg
  • 3/4 cup milk
  • 1/4 cup real maple syrup
  • 1/2 cup (from 10-oz bag) Cascadian Farm™ organic frozen blueberries
  • 1/3 cup pecans
  • 1 container (6 oz) Yoplait® Original vanilla yogurt

Steps

    Heat oven to 375°F. Lightly spray 8x4-inch loaf pan with nonstick cooking spray.

    In medium bowl, mix oats, baking powder, salt and cinnamon. In small bowl, lightly beat egg; add milk and syrup. Add egg mixture, blueberries and pecans to oat mixture; stir well to blend.

    Pour mixture into pan. Bake 23 to 27 minutes or until oatmeal is set in center. Spoon into serving bowls; top with yogurt.

Expert Tips

  • Honey (3 tablespoons) can be substituted for maple syrup in this recipe.
  • Substitute fresh berries for the frozen berries in this recipe.
