    Barbecue Chicken Salad is a combo of fab flavor and texture contrasts – salty and sweet, tender and crisp, crunchy and creamy. It’s like your favorite chicken sandwich, lightened up without the roll and served in a vibrant salad.

    Here's all you need:

    This sweet and fabulous salad starts with a bed of baby lettuce. Choose whatever variety you like the best. Or use your favorite lettuce torn into bite size bits. Use leftover chicken for this if you have it. It’s particularly good if it’s leftover rotisserie chicken. Mmm. Sprinkle it with crumbled bacon. Everything is better with bacon.

    Follow that with whatever veggies you want, along with blue cheese and a light drizzle of barbecue sauce. And if that’s not enough, just finish it off with your favorite Italian dressing.

    Then stick a fork in it and enjoy!

Ingredients

  • 8 cups baby lettuce (or lettuce in bite-size pieces)
  • 2 cups chopped cooked chicken (such as rotisserie chicken)
  • 1/2 cup crumbled blue cheese
  • 4 slices bacon, cooked to crisp, cooled and crumbled
  • 1/4 cup barbecue sauce
  • 1/2 cup Italian dressing

Optional:

  • Shredded carrots, fresh tomato wedges, diced red bell pepper

Instructions

  • Step 
    1
    Separate the lettuce evenly among four plates (two cups per plate). Top each with 1/2 cup chicken, 2 tablespoons blue cheese and 1 crumbled slice of bacon. Also, add any other veggies that you desire.

    Drizzle each salad with 1 tablespoon barbecue sauce. Dress with 2 tablespoons Italian dressing, as desired.
