Honey-Mango Granola Cups

Get a taste of the tropics in these bite-sized cups made with bits of mango and organic oats & honey granola held together with sweet honey. The best part? You can make them ahead and have breakfast or a post-workout snack all week long.

Ingredients

  • 1 1/2 cups Cascadian Farm™ organic oats & honey granola (from 16-oz box)
  • 3 tablespoons butter, melted
  • 2 tablespoons honey
  • 1/3 cup full-fat plain Greek yogurt
  • 3 tablespoons finely diced fresh mango
  • 1/2 teaspoon grated lime peel

Steps

    Heat oven to 350°F. Spray 12 mini muffin cups with cooking spray.

    In food processor, place granola. Cover; process until coarsely crumbled. Add melted butter and honey, and process until combined.

    Spoon 1 heaping tablespoon of the mixture into each muffin cup. Press mixture down in center and up sides of muffin cups.

    Bake 9 to 11 minutes or until edges are golden brown. Remove from oven; cool completely in pan, about 30 minutes. Using tip of paring knife, gently loosen edges of cups, and remove from pan to serving tray.

    To serve, spoon 1 slightly rounded teaspoon yogurt into each granola cup. Top with mango and lime peel. Serve immediately.

    To dice mango, stand the mango stem end down, and hold. Look for two wide sides or “cheeks.” Starting at top, place knife about 1/4 inch from widest center line, and cut down through mango, cutting around flat seed in center of fruit. Repeat with opposite remaining wide side. Cut flesh of wide sides by slicing them in cross-hatch pattern, making sure not to cut through skin. To remove mango pieces, push skin inside-out so cut mango pieces fan out, and cut pieces from skin. Cut two remaining narrow sides from pit by cutting around pit. Peel and cut mango pieces.
