Orange-Blackberry Mascarpone Granola Toast

This "Instagrammable" toast looks too pretty to eat with vibrant blackberries and oranges layered over mascarpone, but with a finishing touch of crunchy oats & honey granola, you won’t be able to resist for long.

Ingredients

  • 4 slices hearty multigrain, wheat or white bread
  • 1/2 cup mascarpone cheese, softened
  • 1 tablespoon honey
  • 1/2 cup fresh blackberries
  • 1/4 cup orange sections, cut in thirds
  • 1/2 cup Cascadian Farm™ organic oats & honey granola (from 16-oz box)
  • 1 teaspoon grated orange peel

Steps

  • 1
    Toast bread as desired. Spread each slice with 2 tablespoons of the mascarpone cheese.
  • 2
    Drizzle with honey; top with blackberries and orange sections. Sprinkle with granola and orange peel.

Expert Tips

  • If blackberries are very large, cut in half before placing on toast.
  • For pretty orange peel, use a bartender’s zester or “channel knife” to remove the peel from the orange.
