Easy to slice, absolutely delicious, paleo “white bread” made with cashew butter and coconut flour—not a smidgen of flour involved!

Ingredients

  • 1 cup cashew butter
  • 4 eggs
  • 2 tablespoons raw honey
  • 1/4 cup coconut flour
  • 1 1/2 teaspoons baking powder
  • 1 tablespoon apple cider vinegar
  • 1/4 cup coconut or almond milk
  • Pinch salt

Steps

    Preheat oven to 350° F. In a large stand mixer, combine all ingredients, beating until light and very well mixed. Pour into a well-greased or parchment-lined 8.5 x 4.5-inch loaf pan.

    Bake for 30-37 minutes, or until the bread is golden brown and a toothpick comes out clean.

    Cool completely before slicing.

  • There are a lot of paleo bread recipes out there. Most of them are weird. You can trust me on this one, because I’ve gone done and been paleo for nearly 6 rotations of the sun. And most of them have seen me resigned to never-eating-bread-againness. Just because who wants to hunt down tapioca flour and arrowroot paste nuggets just so they can make a measly loaf of heavy almond flour bread that tastes like a brick? Well, not me. I adore bread. But only when it tastes like bread. And looks like bread. And chews like edible things. And is made with ingredients I can actually find on one my frantic post-work 5pm runs to the grocer. Are you like me? All paleo and stuff, But believing that means life is easier when you simply let all your bread dreams die? Except. Wait. I totally made paleo bread this week. And it was soft and slice-able and gloriously tender. And it called for less than 7 ingredients, all of which are sitting on store shelves right.this.very.minute. Check out this ingredient line-up. It’s so basic, even a newb college kid living on paleo ramen can pronounce these ingredients. Cashew butter. Eggs. Honey. And, no. There is no such thing as paleo ramen. Watch how easy this is: Ingredients= Mix. That’s it. That’s how you make this bread. Easy ingredients, tossed into a mixer and mixed until smooth. Then poured into a bread pan and baked. Check out the color on that loaf. It is NOT the color of black and ratty rye. It does not have the speckled texture of mealy almond massiveness. It’s just golden and soft and begging for a slicing. Grab a bowl you guys. Grok would want you to make this bread. He’d obviously also want you to milk your cavecow and serve it with cavebutter. And, of course. Feel free to share it with friends. Because every paleo eater deserves good paleo bread. And this stuff may just be the best you’ve ever made!
