Carrots and grapes mingle in a ginger-honey glaze in this sweet side dish.

Ingredients

  • 3 cups crinkle-cut fresh carrots (baby carrots work, too)
  • 2 tablespoons butter
  • 2 tablespoons honey
  • 2 teaspoons grated fresh ginger
  • Ground nutmeg to taste
  • 1 cup seedless red and/or green grapes, halved
  • 2 tablespoons pecans, chopped

Steps

    In saucepan, combine carrots and 1/2 cup water. Cover with tight-fitting lid and heat to boiling, letting steam 2 to 3 minutes until barely crisp-tender. Drain.

    In a skillet, combine butter, honey, ginger, and nutmeg. Cook over medium heat, tossing gently for 5 minutes or until glzed and heated through.

    Add grapes and nuts. Serve immediately.
