Turkey, Bacon and Kale Roll-Ups

These substantial party snacks — filled with lean turkey, crisp bacon and lightly dressed kale — use hummus instead of cream cheese for a healthy-ish twist on the greatest make-ahead appetizers we know of: tortilla roll-ups.

Ingredients

  • 2 cups shredded kale leaves, thick inner ribs removed
  • 2 tablespoons olive oil
  • 1/4 teaspoon crushed red pepper flakes
  • 1/4 teaspoon salt
  • 1 container (8 oz) hummus
  • 4 large spinach flour tortillas (10 inch)
  • 12 oz thinly sliced smoked deli turkey
  • 1 jar (6 oz) Progresso™ marinated artichoke hearts, drained, chopped, patted dry
  • 1 cup jarred roasted red bell pepper strips, patted dry
  • 8 oz fresh mozzarella pearls, patted dry
  • 8 cooked bacon strips

Steps

    In medium bowl, mix kale, olive oil, pepper flakes and salt; massage lightly to soften leaves. Let stand while assembling roll-ups.

    Spread one-fourth of the hummus over each tortilla, spreading evenly, leaving 1/2-inch border. Divide turkey evenly among tortillas. Top half of each tortilla with artichoke hearts and pepper strips. Top with mozzarella, then kale mixture. Place 2 slices bacon down center of mixture on each.

    Starting from side with toppings, roll up very tightly. Wrap with plastic wrap. Refrigerate at least 2 hours but no longer than 24 hours.

    To serve, cut 1 inch from end of each roll, and discard. Cut each roll into 8 (1-inch) slices.
